Homemade Ice Cream

This ice cream is perfect if you’re looking for a vegan ice cream option. If you prefer non-vegan you can substitute cream or half & half. Add fruit of your choice, or enjoy a creamy vanilla treat!

1/2 cup organic sugar
2 cans full fat organic coconut milk
(you can substitute one can organic heavy whipping cream*
or half & half)
2 tsp pure vanilla extract
pinch of Real Salt

Put all ingredients in blender and blend on high for 2 minutes. Pour mixture into ice cream maker. Add fruit if desired (cherries, strawberries or blueberries, etc). Let churn (see machine instructions for time). Spoon ice cream into a freezer safe container, cover and chill until hard (about 4-6 hours).

*use empty coconut milk can to measure. Heavy whipping cream will make the ice cream very rich. Use half & half if you would prefer a lighter ice cream.
